Overnight Oats:  Peach Cobbler

This is amazing.
If you prefer your oats a bit thinner, add a little extra milk in the morning
Eat cold, but you can take the chill off (if you prefer) by microwaving each individual serving for 20 seconds.

Ingredients

Oats

  • 1 c. rolled oats (or regular old-fashioned oat, not instant)
  • 1 Tbls. chia seeds
  • 1 c. unsweetened almond milk or regular milk of choice
  • 1/2 c. Greek yogurt (vanilla or plain)
  • 1 Tbls. maple syrup
  • 1 t. vanilla extract
  • 1 t. cinnamon optional

Peach Cobbler

  • 2 peaches, diced (skin removed is optional)
  • 1 Tbls. maple syrup
  • 1 t. vanilla extract
  • 1 t. cornstarch (totally optional, helps soak up some of peach juice)
  • chopped pecans, optional

Instructions

In a mason jar or other container with a lid, combine oats, chia seeds, yogurt, milk, 1 tablespoon of maple syrup, 1 teaspoon vanilla extract and cinnamon. Give it a good stir to combine.

Dice peaches. In a large bowl, combine the peaches, 1 teaspoon vanilla, 1 tablespoon maple syrup, and cornstarch (if using). Mix to coat the peaches.

Heat a nonstick skillet or saucepan on medium heat. Add the peach mixture and heat, stirring for about 3-5 minutes, or until the peaches fully soften.

Add half of the cooked peaches to the oat mixture and give it a good stir to combine.

Refrigerate remaining peaches.

Refrigerate oat mixture overnight (or at least 3-4 hours) in a large mason jar or an airtight container.

When ready to serve the next morning, stir oat mixture well, divide among serving bowls and top with remaining peaches. Sprinkle with chopped pecans, if desired.
