Festive to make for the Christmas holidays, but good any time of year.
You can substitute white chocolate chips for chocolate chips, if preferred.
2 large eggs
3/4 c. canola oil
3 t. grated orange zest (juice orange and set aside)
2-1/2 c. unbleached all-purpose white flour
1 c. white sugar
1/2 t. baking powder
1/2 t. baking soda
1/4 t. salt
1 c. buttermilk
1-1/2 c. chopped fresh or frozen cranberries, semi thawed (cut in half)
1 c. mini chocolate chips or white chocolate chips
1 c. chopped walnuts
3/4 c. powdered sugar
2 Tbls. fresh orange juice
In a bowl combine eggs, oil and orange zest; mix well.
In another bowl, combine flour, sugar, baking powder, baking soda and salt.
Add dry ingredients to the egg, oil and orange zest mixture alternately with buttermilk.
Fold in cranberries, chocolate chips and walnuts.
Pour batter into 2 greased and floured 8x4-inch loaf pans (or 4-5 mini loave pans).
Bake at 350 degrees until toothpick inserted in the center comes out clean, about 50-60 minutes (35-40 minutes for mini loaf pans).
Cool for 10 minutes before removing from pans to wire racks.
GLAZE: Combine powdered sugar and orange juice until smooth. Drizzle over cooled loaves.
