1-1/2 lbs. lean ground chuck or ground sirloin
1 lg. onion
1 + 1/2 pkg. El Paso taco seasoning – low sodium
16 oz. can refried beans
jalapeno peppers, chopped
12 oz. jar picante sauce
1-1/2 c. cheddar cheese, shredded
1-1/2 c. Monterey jack cheese, shredded
tortilla or nacho chips
low-fat sour cream
lettuce, shredded
tomatoes, diced
black olives, sliced
Brown meat and onions; drain fat and add taco seasoning.
In a greased 9 x 13" baking dish spread refried beans and top with ground beef mixture.
Sprinkle with jalapeno peppers (optional). Drizzle with picante sauce and top with shredded cheeses.
Cover and chill if made ahead of time.
Bake covered at 375 degrees for 20-25 minutes, or until heated thoroughly.
Uncover and bake additional 10 minutes.
Remove from oven and garnish with lettuce, tomatoes, black olives, and sour cream.
