Banana Bread with Sour Cream

This is a very moist bread.

Makes 1 large loaf or 3 mini loaves

Ingredients
  • 1/2 c. butter, softened

  • 1 c. white sugar

  • 2 large eggs, room temperature

  • 3 medium ripe bananas, mashed

  • 1/2 c. low fat sour cream (Daisy)

  • 2 t. vanilla extract

  • 1-1/2 c. unbleached all-purpose white flour

  • 1 t. baking soda

  • 1/2 t. baking powder

  • 1/2 t. salt

Instructions

In a large bowl, cream butter and sugar. Beat in eggs. 

Add bananas, sour cream and vanilla.  Mix until blended. 

In a bowl, whisk flour, baking soda, baking powder and salt; stir into banana mixture just until combined.

 Transfer to a greased 9x5-in. loaf pan or 3 mini loaf pans

 Bake at 350 degrees until a toothpick inserted in center comes out clean, about 50-55 minutes for a large loaf or 35-40 minutes for 3 mini loaves. 

Cool in pan 10 minutes before removing to a wire rack to cool.
