Banana Bread Oatmeal

The caramelized bananas and toasted walnuts on top turn oatmeal into a gourmet breakfast.

Ingredients

  • 1 c. old fashioned rolled oats
  • 2 c. water (or 1 c. water & 1 c. milk) - see note
  • 1 t. cinnamon
  • 1 t. vanilla
  • pinch of sea salt
  • 1 banana, sliced
  • a little brown sugar or extra maple syrup for more sweetness to serve, if needed

Banana Walnut Topping

  • 4 t. butter
  • 4 t. maple syrup
  • 1 banana, sliced
  • 2 Tbls. chopped walnuts

Instructions

Add oats, cinnamon, vanilla, sea salt and banana slices to a medium pot. Add water (or water and milk) and stir to combine. Heat over medium-high heat for 8-10 minutes. Be sure to stir the oats several times while cooking to make sure the banana slices melt into the oats and the oats don't stick to the pot. You’ll know the oatmeal is done when all the liquid is absorbed and the oats are thick and fluffy.

While the oats are cooking, start topping

Topping: Heat a small skillet over medium and add butter and maple syrup.

Add the other sliced banana and walnuts to the skillet. Cook banana slices for 2 minutes on each side or until they start to get a golden crust. Heat walnuts until they are just toasted. Remove from heat.

To Serve: Place cooked oats into a bowl and top with caramelized bananas and walnuts.

For sweeter oats, drizzle with extra maple syrup or a little brown sugar.

NOTE: Serves 2

Original recipe called for using all water, I prefer oatmeal made with milk, so I made it with half water and half milk.
