mixed greens with spinach & arugula for 6 people (or arugula and spinach mix)
4 c. seedless red watermelon chunks (1 to 2-inch pieces)
4 oz. low-fat feta cheese, crumbled
1/2 c. slivered red onion, sliced thin
1-1/2 Tbls. olive oil
1-1/2 Tbls. fresh mint leaves, finely chopped (more for garnish)
1 Tbls. fresh orange juice
1 Tbls. champagne vinegar
1/2 t. kosher salt
1/8 t. freshly ground pepper
Combine watermelon, greens, feta crumbles and red onion in a salad bowl. Toss gently.
Dressing: Whisk together olive oil, chopped mint leaves, orange juice, champagne vinegar, salt and pepper in a small bowl. Drizzle over salad. Garnish with additional mint leaves. Serve immediately.
