Tuna Wraps (warmed)

Fix It In Foil Cookbook

Good to make for camping

Ingredients

  • 12 oz. can tuna in water, drained
  • 2 c. cooked long grain rice (Uncle Ben’s)
  • 1 c. frozen peas
  • ½ c. mayonnaise (Hellman’s)
  • 1 Tbls. lemon pepper seasoning
  • 1-1/2 c. shredded cheddar cheese, divided
  • 4 (10-inch) or 6 (8-incn) whole wheat or flour tortillas
  • heavy duty foil

Instructions

Cut 4 or 6 (16” inch) pieces of heavy-duty foil and set aside.

In a medium bowl, combine drained tuna, cooked rice, peas, mayonnaise, lemon pepper and 1 cup cheese; mix well.

Spread an equal portion of tuna mixture across the center of each tortilla. Fold and roll up tortillas, enclosing the filling like a burrito.

Place each rolled tortilla on a piece of foil with seam side down. Wrap foil around each tortilla.

You can heat 2 ways, on a grill or in the oven:

Grill: Lay foil wrapped tortillas on grill grate, medium high indirect heat. Grill for about 10 minutes, turning once.

Oven: Lay foil wrapped tortillas on a baking sheet and bake at 350 degrees for 15-22 minutes, or until heated through.

After cooking, sprinkle remaining cheese on top of tortillas.
