Rhubarb Muffins
Very moist.


Ingredients
- 1/2 c. canola oil (or 1/4 c. unsweetened applesauce and 1/4 c. oil)
- 1 egg
- 1-1/4 c. packed brown sugar
- 1 c. low-fat buttermilk
- 2 t. vanilla
- 2-1/2 c. all-purpose unbleached white flour
- 1 t. baking powder
- 1/2 t. salt
- 1 t. baking soda
- 1 t. cinnamon
- 2 c. finely cut rhubarb
- 1/2 c. chopped walnuts
Instructions
Mix oil (applesauce if using), egg, brown sugar, buttermilk and vanilla.
Add dry ingredients.
Fold in rhubarb and walnuts.
Spoon batter evenly into greased or paper lined muffin cups until 2/3 full.
Bake at 350 degrees for 20-25 minutes. Remove to wire rack.
NOTE: Makes 18 muffins
