Pineapple Bread Souffle

Simple, easy to make and delicious.

You can make ahead of time (don’t add brown sugar until you bake), cover and refrigerate until you want to bake. Remove from oven, uncover, and brown sugar over top and bake accordingly.

Ingredients
  • ½ c. butter, softened

  • 1 c. white sugar

  • 4 eggs

  • 5 slices good quality white bread, cut into 1-inch cubes (French, Italian, sour dough)

  • 20 oz. can crushed pineapple, drained

  • 1/3 c. brown sugar, packed

Topping Choices for Serving
  • vanilla ice cream

  • whipped cream or Tru Whip

  • Greek Pineapple Yogurt (Chobani)

Instructions

Grease a 6 x 10-nch baking dish and set aside.

In a large mixing bowl, cream butter and sugar until light and fluffy. Beat in the eggs one at a time.

Stir in the bread cubes and crushed pineapple until well blended.

Pour mixture into prepared baking dish. Sprinkle brown sugar evenly over top.

Bake at 350 degrees for 45-60 minutes, until bread tips on top are golden brown.

Cool before serving (or eat a little warm, if you prefer).

Serves 8

NOTE: This is perfect as is, but can also be served with a dollop of whip cream, a dollop of Chobani pineapple Greek yogurt or scoop of vanilla ice cream, if desired.
