I love this salad!
The honey lime dressing is fabulous and really makes this salad.
2-1/2 c. torn red leaf lettuce
2-1/2 c. torn romaine lettuce
1-1/2 c. torn Boston lettuce
11 oz. can mandarin oranges, well drained
1/2 c. chopped green pepper
small celery rib, thinly sliced
1/8 c. chopped red onion
1 c. honey roasted cashews
1/4 c. canola oil
1/8 c. honey
1/4 t. ground mustard
1/4 t. grated lime zest
1/8 t. paprika
pinch of salt
dash of white pepper
In a large salad bowl, combine the lettuces, oranges, green pepper, celery and onion.
Dressing: In a small bowl, combine oil, honey, mustard, lime zest, paprika, salt and pepper; mix well. Drizzle over salad. Refrigerate leftovers, but to use again you will need to microwave a few seconds to get honey soft; whisk until smooth.
Add cashews and toss to coat. Serve immediately.
