romaine lettuce (for 6)
1/2 c. sliced green onions
1/2 c. chopped celery
1/2 c. shredded mozzarella cheese
2-1/4 oz. can sliced ripe olives, drained
1 med. tomato, cut into wedges
mushrooms, shaved carrot and red onion slices, optional
2 Tbls. shredded Parmesan cheese
ceasar croutons, optional
1/2 c. canola or olive oil
1/4 c. red wine vinegar
2 cloves garlic, minced
1/2 t. dried oregano
1/2 t. salt
1/4 t. pepper
In a container with a tight-fitting lid, combine dressing ingredients; shake well and set aside.
In a large bowl, combine lettuce, onion, celery, mozzarella cheese, olives and tomato.
Just before serving, drizzle desired amount of dressing and toss.
Sprinkle with Parmesan cheese and add croutons, if desired.
