Green Pepper Dip

Pretty for the holidays

Ingredients
  • 2 Tbls. vinegar

  • 2 Tbls. sugar

  • 2 Tbls. melted butter

  • 8 oz. pkg. softened low-fat cream cheese

  • 1/4 - 1/2 c. green pepper, chopped fine

  • small onion, chopped fine

  • whole green or red pepper

  • crackers of your choice

Instructions

Melt butter in a small saucepan and add vinegar and sugar. Boil for 1 minute; cool on another burner (do not cool in refrigerator).

When cooled to room temperature, blend in cream cheese, pepper, and onion.

Mix the above ingredients with a mixer until smooth. Clean out (drain all moisture if possible) the inside of a large green pepper.

Pour dip into whole pepper and serve with crackers of your choice.

NOTE: Use red for Christmas.
