Romaine lettuce for 4, torn into bite-size pieces
½ of a medium cucumber
1 tomato, chopped
2-3 Tbls. chopped or sliced red onion
½ c. crumbled reduced fat feta cheese
mushroom slices, optional if desired
sliced black olives, optional if desired
1 Tbls. extra-virgin olive oil
1 Tbls. fresh lemon juice
1/2 t. dried oregano
1/4 t. salt
Combine lettuce, cucumber, tomato, onion and cheese in a large bowl. Add mushroom slices and black olives if using.
Whisk together the oil, lemon juice, oregano and salt in a small bowl. Pour over lettuce mixture and toss to coat.
