Eggroll In a Bowl with Spicy Aioli

Serve over rice or cauliflower rice
Quick and easy meal.

Ingredients

  • 1 lb. ground pork (can substitute with ground chicken, turkey, or beef)
  • 1 sweet onion, diced
  • 1 Tbls sesame oil
  • 1 Tbls. rice vinegar
  • 2 t. minced fresh garlic
  • 1 t. ground ginger (or 4 t. fresh ginger)
  • 1/4 c. low sodium soy sauce (Kikkoman)
  • 1 Tbls. hoisin sauce
  • 1 (16 oz.) bag coleslaw mix - rinsed and dried (or 1 small shredded cabbage & 1/2 c. grated carrots)
  • 2 green onions, thinly sliced
  • salt and pepper, to taste

Spicy Aioli

  • 1/2 c. mayonnaise (Hellman's)
  • 1 Tbls. sriracha
  • zest from half a lime
  • juice from half a lime

Instructions

Brown meat with diced onion, on medium high heat. Drain grease.

Add sesame oil, rice vinegar, garlic, ginger, soy sauce, hoisin sauce and stir to mix; cook for 1-2 minutes.

Fold in coleslaw (or cabbage and carrots). Cook, stirring, until cabbage is wilted, about 6-7 minutes.

Add green onions, salt and pepper to taste.

Serve over rice or cauliflower rice with a drizzle of spicy aioli sauce on top.

Aioli Sauce: Mix ingredients together and stir until smooth. Refrigerate if making ahead.
