Cranberry Orange Cheesecake (low fat)

Using low-fat ingredients doesn't alter the texture or flavor of cheesecake.

Wonderful to make during the Christmas holiday season

Ingredients
Crust
  • 1 c. graham cracker crumbs

  • 2-3 Tbls. butter, melted

Filling
  • 2 c. low-fat cottage cheese (Daisy)

  • 8 oz. low-fat cottage cream cheese

  • 2/3 c. white sugar

  • 1/2 c. low-fat plain yogurt

  • 1/4 c. unbleached all-purpose white flour

  • 2 egg whites

  • 1 egg

  • 1 Tbls. orange zest (save juice)

  • 1 t. vanilla

Topping
  • 2 c. whole cranberries (fresh or frozen)

  • 1/2 c. fresh orange juice

  • 1/2 c. white sugar

Instructions

Crust:  Combine graham cracker crumbs and butter.  press into a 9-inch springform pan.  Bake at 350 degrees for 5 minutes. 

Filling:  In a food processor, blend cottage cheese until smooth.  Add cream cheese, blend until smooth. 

Add sugar, yogurt flour, egg whites, egg, orange zest and vanilla.  Blend just until smooth (don’t over mix). 

Pour over crust.  Bake at 325 degrees for 45-50 minutes or unt8l almost set in center. 

Remove from oven and immediately run a knife blade around edges to loosen from rim.  Cool on wire rack.  Chill before serving.

Topping:  Combine cranberries, orange juice and sugar in a saucepan.  Bring to a boil, stirring constantly.  Simmer for 5 minutes until berries pop and sauce starts to thicken. 

Chill until ready to serve. 

Spread over cheesecake just before serving.
