You can easily cut this recipe in half to make 4 small servings in mini jars
2 c. low fat cottage cheese (Daisy)
1 c. fresh raspberries
1/4 c. honey or maple syrup
1 t. vanilla extract
1 Tbls. milk, optional for creaminess
2 t. chia seeds, optional (helps to thicken and adds health benefits)
fresh raspberries and mint leaves for garnish
whipped cream, optional
In a blender or food processor, combine cottage cheese, raspberries, honey, and vanilla extract. Blend until smooth and creamy. Add milk and chia seeds, if desired and blend until smooth and creamy.
Spoon the mixture into serving cups or mini jars, refrigerate for at least 2-3 hours or until the mousse has set.
To serve, garnish with fresh raspberries and mint leaves before serving. A dollop of whipped cream is optional
Serves 4 mini jars or 4-6 dessert dishes, depending on the size.
