1 c. low-fat cottage cheese (Daisy)
2 Tbls. natural peanut butter (no palm oil or sugar added)
1 small banana, ripe
1 Tbls. chia seeds
1 Tbls. honey or maple syrup
1/2 t. vanilla extract
1-2 Tbls. milk or almond milk
dollops of whipped cream
mini chocolate chips
crushed peanuts
In a mini food processor, combine cottage cheese, peanut butter, banana, chia seeds, honey or maple syrup and vanilla extract. Stir and add a little milk to desired consistency. Pulse again until smooth.
Spoon mouse into small dessert dishes or mini jars. Chill in refrigerator for at least 4 hours or overnight.
