Cottage Cheese Banana Peanut Butter Mousse

Full of protein and so creamy and delectable.

Ingredients
  • 1 c. low-fat cottage cheese (Daisy)

  • 2 Tbls. natural peanut butter (no palm oil or sugar added)

  • 1 small banana, ripe

  • 1 Tbls. chia seeds

  • 1 Tbls. honey or maple syrup

  • 1/2 t. vanilla extract

  • 1-2 Tbls. milk or almond milk

 

Topping Choices (optional)
  • dollops of whipped cream

  • mini chocolate chips

  • crushed peanuts

Instructions

In a mini food processor, combine cottage cheese, peanut butter, banana, chia seeds, honey or maple syrup and vanilla extract.  Stir and add a little milk to desired consistency. Pulse again until smooth.

Spoon mouse into small dessert dishes or mini jars.  Chill in refrigerator for at least 4 hours or overnight.
