Great for breakfast, snack or dessert.
The trick to thickening Chia seed pudding is to stir often, a few times after mixing, then refrigerating several hours or overnight.
1 c. milk of your choice
1/4 c. chia seeds
1/2 c. diced mango
1 Tbls. maple syrup or honey
additional diced mango
shredded coconut
pecans, chopped
Add milk, chia seeds, 1/2 cup diced mango and maple syrup or honey to a food processor. Blend until smooth.
Transfer to a bowl and cover. Refrigerate for 20 minutes. Stir and if not thickened, continue to refrigerate for another 30minutes.
Once thickened, transfer to mini jars or small dessert dishes and refrigerate for several hours before serving.
Garnish with toppings of your choice.
Makes 4 small or 2 medium servings.
