A refreshing and healthy dessert.
First made for Cindo de Mayo 2025
The trick to thickening Chia seed pudding is to stir often, a few times after mixing, then refrigerating several hours or overnight.
1 c. unsweetened almond milk or regular milk
1/4 c. chia seeds
2 Tbls. honey
Zest of 1 lime (save some for garnish)
juice of 2 key limes (or 1 regular lime)
1/2 t. vanilla extract
1/4 c. low-fat lime Greek yogurt (or plain)
TruWhip or whipped cream for sreving
In a mixing bowl or jar, whisk together milk, chia seeds, honey, lime zest, lime juice, vanilla extract and Greek yogurt.
Let mixture sit for 5 minutes, then stir again to prevent clumping of chia seeds. Let sit for another 5 minutes and stir again.
You can divide up among dessert cups, mini jars or leave in bowl or jar. Cover and refrigerate for at least 3 hours or overnight until thickened. If using a bowl, stir well and divide into dessert cups before serving.
Top with a dollop of true whip or whipped cream and extra lime zest.
