Chia Pudding: Banana & Peanut Butter

Ingredients

  • 4 Tbls. chia seeds
  • 1 c. of milk
  • 1 t. vanilla extract
  • 1 Tbls. creamy peanut butter, softened (Jiff Natural)
  • pinch of salt
  • 1 ripe banana, sliced
  • 1-1/2 Tbls. peanut butter, divided
  • 1 Tbls. maple syrup optional for serving

Instructions

In a medium bowl, combine the chia seeds, milk, vanilla extract, tablespoon of soft peanut butter and a pinch of salt. Stir well to ensure the chia seeds are evenly distributed. **Let stand 5 minutes. Whisk and let stand another 5 minutes.

Cover the bowl and refrigerate to allow the chia seeds to absorb the liquid and form a pudding-like consistency. Stir again, after 30 minutes of being in refrigerator.

Divide the chia pudding into two servings (dessert cups or mini jars). Cover and refrigerate for at least 4 hours or overnight.

When ready to serve, peel and slice banana.

Top each serving with sliced banana, a dollop of peanut butter and drizzle with a little maple syrup, if desired.
