Baked Apples, Cranberries & Walnuts
Baked Apples, Cranberries & Walnuts

Serve over vanilla ice cream or frozen yogurt

Ingredients
  • 3 lg. baking apples, peeled, cored and cut into small chunks
  • 1/2 c. water
  • 1 c. dried cranberries
  • 3/4 c. coarsely chopped walnuts
  • 1 t, ground cinnamon
  • 1/2 c. packed brown sugar
  • 1 Tbls. brandy, optional
  • vanilla ice cream or frozen yogurt
Instructions

Combine all ingredients except brandy. Pour into a lightly greased 9x9 baking dish (or similar size dish).

Bake at 350 degrees for about 45 minutes, or until apples are tender. Stir occasionally.

Remove from oven and if desired, pour brandy over all; stir to mix in. Let stand 10 minutes before serving. Liquid will thicken up.

Serve over vanilla ice cream or frozen yogurt.

NOTE: Makes 4 large or 6 smaller servings.
