1 ripe avocado (diced)
1 t. lemon or lime juice
1/2 t. salt
8 oz. container cottage cheese
8 oz. low-fat cream cheese, softened
shredded Colby-jack or Monterey cheese
chopped onion
shredded lettuce
diced tomato
Mix avocado, lemon juice, salt, cottage cheese and cream cheese in food processor.
Spread mixture on serving plate or platter; refrigerate to harden.
When ready to serve, top with chopped onion, lettuce, tomato and cheese.
