2 c. Daisy cottage cheese (or low-fat)
3 large eggs
1/4 c. maple syrup or honey
1 t. vanilla extract
1/2 c. rolled oats
1 1/2 t. ground cinnamon
1 t. baking powder
1 large apple, peeled and sliced
vanilla or vanilla-cinnamon Greek yogurt
chopped nuts
dusting of cinnamon
Preheat oven to 350 degrees and grease an 8 x 8-inch baking dish.
Whisk cottage cheese, eggs, maple syrup, and vanilla in a bowl.
Stir in oats, cinnamon, and baking powder.
Fold in apple slices.
Pour into baking dish and spread evenly.
Bake for 35-40 minutes until golden and toothpick comes out clean. Let cool slightly before slicing and serving.
