Apple Cinnamon Cottage Cheese Bake

A delicious high protein breakfast

Ingredients

  • 2 c. Daisy cottage cheese (or low-fat)
  • 3 large eggs
  • 1/4 c. maple syrup or honey
  • 1 t. vanilla extract
  • 1/2 c. rolled oats
  • 1 1/2 t. ground cinnamon
  • 1 t. baking powder
  • 1 large apple, peeled and sliced

Optional Toppings

  • vanilla or vanilla-cinnamon Greek yogurt
  • chopped nuts
  • dusting of cinnamon

Instructions

Preheat oven to 350 degrees and grease an 8 x 8-inch baking dish.

Whisk cottage cheese, eggs, maple syrup, and vanilla in a bowl.

Stir in oats, cinnamon, and baking powder.

Fold in apple slices.

Pour into baking dish and spread evenly.

Bake for 35-40 minutes until golden and toothpick comes out clean. Let cool slightly before slicing and serving.
