Almond Joy Cookies

These are one of my favorite cookies!

Ingredients

  • 1/2 c. butter, softened
  • 1/2 c. light brown sugar
  • 1/4 c. white sugar
  • 1 large egg
  • 2 t. coconut extract
  • 1 t. almond extract
  • 1-1/4 c. unbleached white all-purpose flour
  • 1 t. cornstarch
  • 1/2 t. baking soda
  • pinch of salt
  • 1 c. sweetened shredded coconut
  • 1 c. slivered almonds, chopped a bit
  • 1 c. dark chocolate chips

Instructions

Using an electric or stand mixer (paddle attachment), combine butter, sugars, egg, and extracts and beat medium speed until well combined.

By hand, stir in flour, cornstarch, baking soda and salt just until combined.

Fold in coconut, almonds and chocolate chips.

Using a cookie scoop, drop balls of dough onto a large tray or in a flat container, cover and refrigerate for several hours. Do not bake using un-chilled dough because cookies will bake thin and flat.

Transfer cookies, 2 inches apart, to a baking sheet lined with parchment paper, or spray lightly with cooking spray. Bake at 350 degrees about 10-12 minutes or until edges have set and cookies have browned. Do not over bake.

Allow cookies to cool 2-3 minutes on the cookies sheets before transferring to a wire rack lined with paper towel to absorb the grease.

Made 26 cookies.

NOTE: You can also freeze unbaked cookie balls (don’t need to refrigerate dough) and bake another time.
