I season the chicken strips with my dry chicken rub (half recipe)
The dressing is amazing!
1 lb. chicken tenders
6 c. spring mix salad greens
1 medium ripe pear, sliced (bosc or bartlet)
1/4 c. crumbled low-fat feta cheese
1/4 c. dried cranberries
1/4 c. chopped walnuts or pecans
2 Tbls. orange juice
2 Tbls. white wine vinegar
1-1/2 t. white sugar
1/2 t. grated orange peel
1/8 t. salt
1/4 c. olive oil
Season chicken strips. Add a little canola oil to a large fry pan and heat to medium heat. Add chicken strips and sauté until golden brown. Remove from pan and slice into thin strips.
Toss salad greens pears, chicken, feta cheese, cranberries and nuts.
In a small bowl, whisk the dressing ingredients, or shake in a covered container, to blend.
Drizzle dressing over salad and serve.
