3/4 c. butter
1-1/2 c. white unbleached all-purpose flour
3 Tbls. white sugar
3 eggs, separated
2-1/4 c. brown sugar
3/4 cup shredded coconut
1 c. chopped pecans
For the crust, mix butter, flour and white sugar; press into a 9x13" baking pan. Bake at 350 degrees for about 15 minutes.
For filling, beat egg yolks and brown sugar together, fold in coconuts and nuts; set aside. Beat the egg whites until stiff. Fold into filling batter and spread onto baked crust.
Bake an another 15-20 minutes at 350 degrees. Cut into squares.
