Zucchini Cookies
Zucchini Cookies

These cookies are great for kids. They are best when freshly baked, and are a soft cookie.

Ingredients
  • 1/2 c. butter, softened

  • 1/2 c. brown sugar

  • 1/2 c. white sugar

  • 1 egg

  • 1 c. grated zucchini

  • 2 c. unbleached all-purpose white flour

  • 1 t. baking soda

  • 2 t. cinnamon

  • 1/2 t. ground cloves

  • 1 c. Dole raisins or

  • 1/2 c. mini-chocolate chips, optional

Instructions

Cream butter, sugar and egg; stir in zucchini.

By hand, stir in dry ingredients. Fold in raisins or chocolate chips.

Chill dough for several hours before baking.

Drop by teaspoons onto a lightly greased cookie sheet.

Bake at 350 degrees for 8-10 minutes.

NOTE: If you want, you can make a powdered sugar glaze with powdered sugar, vanilla and water. Drizzle over the top of each cookie.
