Very moist and delicious.
Adding the cinnamon is a personal preference
1/3 c. canola oil
2/3 c. unsweetened applesauce
3 eggs
1-1/4 c. white sugar
3 t. vanilla
1-1/2 c. unbleached all-purpose white flour
1 c. cake flour
½ c. baking cocoa
1 t. baking soda
¼ t. baking powder
1 t. ground cinnamon
1 t. salt
2 c. shredded, peeled zucchini
1 c. dark chocolate chips (or mini chips)
In a large bowl, using a hand held electric mixer, combine oil, applesauce, eggs, sugar and vanilla until well blended.
In another bowl, combine flours, cocoa, baking soda, baking powder, cinnamon and salt; gradually beat into sugar mixture until blended. Stir in zucchini and chocolate chips, if using.
Transfer to two 8 x 4” loaf pans (or 4 mini loaf pans) coated with cooking spray and dusted with flour.
Bake at 350 degrees for 35-40 minutes for 4 mini loaf pans (40-45 minutes for larger loaves or until toothpick inserted near center comes out clean.
Cool for 10 minutes before removing from pans to wire racks to cool completely.
