Zucchini Bread

Very moist

Ingredients
  • 3 eggs

  • 2 t. vanilla

  • 1 c. canola oil (or 1/2 c. unsweetened applesauce & 1/2 c. oil)

  • 1-1/2 c. white sugar

  • 2 c. grated fresh zucchini

  • 2 c. all-purpose unbleached white flour

  • 2 t. baking soda

  • 1/4 t. baking powder

  • 2 t. cinnamon

  • Nuts, raisin or mini-chocolate chips as desired

Instructions

Combine eggs, oil, sugar, vanilla; stir in zucchini. Add dry ingredients. Mix well.

Add nuts and raisins if desired.

Pour into 2 greased and floured medium loaf pans.

Bake at 375 degrees for 1 hour. Also makes 3-4 mini loafs; only bake about 40-45 minutes.

When done, loosen edges with a knife and let stand in pan for 5 minutes before removing to wire rack to cool.
