3/4 c. chopped celery
1 med. onion, chopped
6 Tbls. butter
1-1/2 t. poultry seasoning
1/2 t. salt
1/4 t. pepper
1 pkg. sage & onion stuffing cubes
1 can of cream of mushroom soup
14-1/2 oz. can of chicken broth
1 c. dried cherries or cranberries (optional)
1/2 c. dried apricots, cut up (optional)
Sauté onion and celery in butter for 5-7 minutes or until onion is tender.
Stir in poultry seasoning, salt and pepper.
Transfer to a large bowl; add stuffing cubes, cream of mushroom soup and broth to moisten. Add dried cherries or cranberries and apricots, if you desire..
Place in a greased 2-qt. baking dish. Cover and bake at 350 degrees for 30-45 minutes. Uncover and bake an additional 10 minutes.
