1 Tbls. canola oil
16 oz. chunky salsa
1 lb. precooked turkey or chicken breast strips
4 (12-inch) or 6 (8-inch) whole-wheat soft tortillas
1/2 c. roasted red pepper hummus
1 avocado, chopped
1/2 c. Mexican-style cheese
chopped lettuce
cilantro
Heat oil in a large skillet over medium-high heat; add the salsa. Heat to a boil, about 3 minutes. Lower heat to medium and add the turkey; cook, stirring until meat is heated through, about 5 minutes.
Spread 2 tablespoons hummus over each tortilla.
Divide the turkey mixture, avocado, cheese, lettuce and cilantro over each. Roll up; cut in half before serving.
