Grilled Sandwich: Swiss Tuna Melts

Super easy, perfect for Lent too!
I prefer using butter flavored olive oil instead of butter, much healthier

Ingredients
  • 2 (5oz. drained) cans light water-packed tuna, drained and flaked

  • 3/4 c. shredded Swiss cheese

  • 1/4 c. low fat mayonnaise

  • 1/4 c. low fat sour cream

  • 1/4 c. chopped onion

  • 1/4 c. chopped celery

  • pepper to taste

  • 8 slices bread (Breadsmith French Pheasant or Sour Dough)

  • 2-3 Tbls. butter, softened (or use butter flavored olive oil)

Instructions

In a bowl combine the tuna, Swiss cheese, mayonnaise, sour cream, onion, celery and pepper.

Spread over bread, about 1/2 cup for each sandwich; top with remaining bread. Butter the outsides of the bread or brush with butter flavored olive oil.

On a griddle or large skillet, over medium heat, grill sandwiches for about 4-5 minutes on each side until lightly toasted.

NOTE: Makes 4 sandwiches
