Healthy and super easy to put together!
Takes tuna to a whole new level.
2 large avocados (or 4 small)
5 oz. can of tuna, drained (packed olive oil or water)
¼ to 1/3 c. diced red bell pepper (or mix of colored peppers)
1 Tbls. minced jalapeno pepper
¼ c. fresh cilantro leaves, roughly chopped
1 Tbls. fresh lime juice
salt and course pepper to taste
1-2 Tbls. diced tomato, optional
2 t. diced red onion, optional
Scoop out some of the avocado from the pitted area to widen the “bowl” area. Place the scooped avocado into a medium bowl; mash with a fork.
Add tuna, bell pepper(s), jalapeno and cilantro to the bowl. Pour lime juice over. If you desire, stir in a little diced tomato and/or diced red onion. Stir together until well mixed.
Scoop tuna mixture into the avocado bowls. Season with salt and pepper to taste and serve.
