Easy one-pan meal that is healthy and easy!
2 Tbls. extra-virgin olive oil
1 c. yellow onion, diced
1 jalapeno, seeded, finely diced
1-1/2 t. Italian seasoning
1 lb. ground sirloin or ground turkey
2 c. whole wheat rotini pasta (or regular rotini)
16 oz. medium chunk salsa
14.5 oz. can chicken broth
14.5 oz. can diced tomatoes
2 Tbls. tomato paste
2 c. frozen golden corn
15 oz. can black beans, drained and rinsed
cherry tomatoes, halved
colby jack cheese, finely shredded
avocado, diced
fresh cilantro, finely chopped
In a large sauté pan, heat oil over medium-high heat. Add onion, jalapeño and Italian seasoning; sauté for 2-4 minutes.
Add ground sirloin or ground turkey. Cook until meat is thoroughly cooked through; drain fat.
Add pasta, salsa, chicken broth, canned tomatoes, tomato paste, corn, and beans. Stir, cover, and bring to a boil.
Reduce heat to a simmer and cook for 18-20 minutes or until pasta is tender.
Top with tomatoes, cheese, avocado, and/or cilantro, as desired.
