Taco Pies (Pie Iron)

I also use my homemade Taco Seasoning



Ingredients
- non-stick spray
- round pie irons (square works also)
- mini-street size flour tortillas (pkg. of 12)
- 1 c. (or more) of refried beans
- 3/4 lb. pre-cooked taco-seasoned ground beef (or turkey)
- small red onion, diced fine
- jalapeno pepper, diced fined (optional)
- small can sliced black olives, optional
- 1 c. shredded cheese (Mexican blend, cotija etc.)
Toppings
- salsa
- low-fat sour cream (Daisy)
Instructions
Oil both sides of pie irons.
Place a tortilla on one side of an oiled pie iron and smear it with a thin layer of refried beans. Add 1/4 to 1/3 cup taco meat, a little onion, a little diced jalapeno if desired and plenty of cheese.
Set a second tortilla over the filling and close the iron; trim off the excess tortilla with a knife (feed the birds, if you like)
Cook on medium coals, turning often, until tortilla is browned, on both sides and filling is hot.
Repeat with remaining ingredients to make more tacos.
Plop them onto plates and add toppings of your choice, i.e. salsa, sour cream etc.
NOTE: Makes 6
