Sweet Potato Bread

So moist, delicious and healthy!

Ingredients
  • 1/2 c. canola oil

  • 1-1/2 c. white sugar

  • 2 eggs

  • 15 oz. can (1-1/2 c.) good quality canned sweet potatoes (see Note below)

  • 6 Tbls. orange juice

  • 1-3/4 c. all-purpose unbleached white flour

  • 1 t. baking soda

  • 1 t. ground cinnamon

  • 1 t. nutmeg

  • 1/4 t. ground allspice

  • 1/4 t. ground cloves

  • 1/2 t. salt

  • 1/2 c. chopped pecans, optional

Instructions

Drain and mash sweet potatoes, set aside.

In a large bowl, combine oil, sugar, eggs, sweet potatoes and orange juice.

Add dry ingredients and mix on low just until blended. Fold in pecans if desired.

Transfer to a greased 9x5x3-inch loaf pan (or 3 mini loaf pans).

Bake at 350 degrees for about 60 minutes if using large loaf pan; 35-40 minutes if using mini loaf pans.

Cool 10 minutes in pan before removing from pan to wire rack to cool completely.

NOTE: If using canned don't use with heavy syrup. You also use fresh sweet potatoes that have been cooked.
