1/2 c. canola oil
1-1/2 c. white sugar
2 eggs
15 oz. can (1-1/2 c.) good quality canned sweet potatoes (see Note below)
6 Tbls. orange juice
1-3/4 c. all-purpose unbleached white flour
1 t. baking soda
1 t. ground cinnamon
1 t. nutmeg
1/4 t. ground allspice
1/4 t. ground cloves
1/2 t. salt
1/2 c. chopped pecans, optional
Drain and mash sweet potatoes, set aside.
In a large bowl, combine oil, sugar, eggs, sweet potatoes and orange juice.
Add dry ingredients and mix on low just until blended. Fold in pecans if desired.
Transfer to a greased 9x5x3-inch loaf pan (or 3 mini loaf pans).
Bake at 350 degrees for about 60 minutes if using large loaf pan; 35-40 minutes if using mini loaf pans.
Cool 10 minutes in pan before removing from pan to wire rack to cool completely.
