If you like Sweet Vadalia Onions, this is a really great side dish
1 Tbls. canola oil
1 Tbls. butter
4 cups chopped sweet vadalia onions (about 1-3/4 lb.)
1/2 c. uncooked long-grain rice
2/3 c. low-fat milk
1/2 c. Gruyere cheese, shredded
1/4 t. salt
1/4 t. ground black pepper
1/8 t. ground allspice
1/3 c. freshly grated Parmesan cheese
2 Tbls. fresh parsley, chopped
Heat a large skillet over low heat. Add oil and butter; swirl to coat. Add onions and sauté about 25-35 minutes until browned and caramelized. Place onions in a large bowl.
Cook rice in a pot of boiling water for 5 minutes, then drain.
Stir rice, milk, Gruyere cheese, salt, pepper and allspice into onions.
Spoon onion mixture into an 8x8-inch square glass or ceramic baking dish coated with cooking spray. Sprinkle evenly with Parmesan cheese.
Bake covered at 325 degrees for 40 minutes. Uncover and bake an additional 5 minutes. Top with parsley and serve.
