2-1/2 c. broccoli florets
2-1/2 c. cauliflower florets
1 c. shredded low-fat cheddar cheese
1/3 c. chopped red onion
1/4 c. raisins
4 center-cut bacon strips, cooked and crumbled
1/8 c. sunflower seeds
1/2 c. low-fat mayonnaise (Hellman's with olive oil)
1/4 c. white sugar
1 Tbls. red wine vinegar
In a large bowl, toss broccoli, cauliflower, cheese, onion and raisins.
In a small bowl, combine mayonnaise, sugar and vinegar. Pour over salad; toss to coat.
Cover and refrigerate for 1 hour.
Sprinkle with bacon and sunflower seeds.
