Super easy and great go to recipe when you don't have a lot of time for preparing a healthy side dish.
1 Tbls. olive oil
1 lb. fresh sugar snap peas
1 t. lemon zest, freshly grated
1 Tbls. fresh lemon juice
1/2 t. sea salt
1/4 t. coarse ground black pepper
Heat oil in a skillet over medium-high heat.
Add the snap peas and toss to coat. Cook snap peas for 5-7 minutes, stirring frequently, until tender crisp.
Remove from heat. Add lemon zest, lemon juice, salt and pepper; toss to coat. Transfer to a serving dish and serve immediately.
