1/3 c. shortening
2 c. all-purpose unbleached white flour
2 Tbls. sugar
3 t. baking powder
1 t. salt
3/4 c. milk
fresh strawberries
8 oz. container of Truwhip (a healthier version of Cool Whip) or fresh whipped cream
Cut shortening into flour, sugar, baking powder and salt with a fork until mixture resembles fine crumbs. Stir in milk just until blended.
Pat into a greased 8 x 8" pan, or roll out and cut into round circles.
Bake at 400 degrees about 20-25 minutes, or until shortcake tests done. Remove from oven and slice lengthwise; top with fresh strawberries and whipped cream.
