Spinach: Strawberry-Kiwi Spinach Salad with Poppyseed Dressing

Ingredients
  • fresh baby spinach for 4, washed

  • 2 c. sliced strawberries

  • 1 kiwi, peeled and sliced

  • 1/8 c. chopped pecans, toasted

Dressing
  • 3 Tbls. olive oil

  • 2 Tbls. white sugar

  • 1-1/2 Tbls. white or good dark balsamic vinegar (18 yr or older)

  • 1 t. poppy seeds

  • 1-1/2 t. sesame seeds, optional

  • 1-1/2 t. chopped onion

  • 1/8 t. paprika

  • 1/8 t. Worcestershire sauce

Instructions

Place the ingredients in the left column in a jar with or container with a tight fitting lid; shake well. Refrigerate for 1 hour. Remove about 20 minutes before serving.

Combine spinach, strawberries, kiwi and pecans in a salad bowl.

Shake dressing and drizzle over salad; toss to coat.

NOTE: Serves 4. Champagne Vinegar works great as well.
