Finally found a Honey-Dijon salad that I love!
This is the perfect salad.
4-6 c. baby spinach or mixed salad leaves including spinach
1/2 c. dried cranberries
1/2 c. crushed walnuts, toasted
1/3 c. Danish feta cheese (regular feta or goat cheese works)
1/2 sweet red apple, sliced (honey crisp or gala)
1/2 granny smith apple, sliced
4 slices center-cut bacon cooked and crumbled
cherry tomatoes, optional
4 Tbls. olive oil
3 Tbls. honey
1 Tbls. apple cider vinegar
1 Tbls. Dijon mustard
Combine all of the salad ingredients into a large salad bowl.
Dressing: Combine olive oil, honey, apple cider vinegar and Dijon mustard in a smaller bowl; blend with a wire whisk until smooth and creamy. Pour the dressing over the salad and serve.
