10 oz. pkg. baby spinach, stems removed
2 medium gala apples, cored and thinly sliced
1 c. pecan pieces, toasted
½ c. dried cranberries
6 oz. center cut bacon, cooked and crumbled
2 Tbls. red onion, chopped or sliced into thin strips
¼ c. olive oil
1/8 c. apple cider vinegar
1 Tbls. pure maple syrup
1 t. Dijon mustard
1/8 t. salt
1/8 t. pepper
Dressing: Add all ingredients to a small mason jar; cover with lid and shake to blend well. Or just blend well in a bowl using a whisk, or use a mini food processor.
In a large salad bowl, toss together spinach, apples, pecans, feta, cranberries, bacon and red onion.
Drizzle desired amount of dressing over salad and toss to evenly coat. Serve immediately.
