Spinach: Apple & Bacon Salad with Maple Vinaigrette
Ingredients
  • 6 oz. pkg. fresh baby spinach

  • 1 granny smith apple, julienne-cut

  • 1/4 c. thinly vertically siced red onion

  • 2-3 slices center-cut bacon, cooked and crumbled

Dressing
  • 1 Tbls. maple syrup

  • 1 t. red wine vinegar

  • 1/4 t. Dijon mustard

  • 1 Tbls. extra virgin olive oil

  • 1 Tbls. chopped fresh chives

  • 1/4 t. salt

  • 1/4 t. freshly ground pepper

Instructions

Dressing: Combine maple syrup, red wine vinegar and mustard in a small bowl, stirring well with a whisk. Gradually add oil and blend with whisk. Add chives, salt and pepper; stir with a whisk until well blended.

Combine spinach, apple, onion and bacon and in a large bowl.

Drizzle with vinaigrette; toss to coat.

NOTE: Serves 4.
