6 oz. pkg. fresh baby spinach
1 granny smith apple, julienne-cut
1/4 c. thinly vertically siced red onion
2-3 slices center-cut bacon, cooked and crumbled
1 Tbls. maple syrup
1 t. red wine vinegar
1/4 t. Dijon mustard
1 Tbls. extra virgin olive oil
1 Tbls. chopped fresh chives
1/4 t. salt
1/4 t. freshly ground pepper
Dressing: Combine maple syrup, red wine vinegar and mustard in a small bowl, stirring well with a whisk. Gradually add oil and blend with whisk. Add chives, salt and pepper; stir with a whisk until well blended.
Combine spinach, apple, onion and bacon and in a large bowl.
Drizzle with vinaigrette; toss to coat.
