1 med. green pepper, diced
1 med. red onion, chopped
2 garlic cloves, minced
jalapeno pepper, optional
1 Tbls. olive or canola oil
14-1/2 oz. can chicken broth
1 c. long grain rice, uncooked
1 t. ground cumin
1/8 t. turmeric
15 oz. can black beans, rinsed and drained
10 oz. can diced tomatoes & green chilies (DO NOT DRAIN)
10 oz. package frozen corn, thawed
In a large nonstick skillet, sauté the green pepper, jalapeno pepper, onion and garlic in oil for 3 minutes.
Stir in the broth, rice, cumin and turmeric; bring to a boil. Reduce heat; cover and simmer for 15 minutes or until rice is tender.
Add beans, tomatoes and corn and heat through.
