This salad features a unique combo of ingredients and a Dijon dressing.
Any variety of apple works, but I like Galas.
6-8 c. watercress greens (see Note)
1 medium carrot, julienned
10 cherry tomatoes
8 oz. smoked turkey, julienned (from Deli)
2 medium apples, sliced thin (your favorite)
1/3 c. chopped walnuts, toasted.
5 Tbls. olive oil
2 Tbls. apple cider vinegar
1 Tbls. Dijon mustard
1 t. lemon-pepper seasoning
½ t. salt, optional
In a small bowl, or jar with tight fitting lid, whisk or shake dressing ingredients until well blended.
Place watercress on a platter or divide among individual plates. Top with carrot, tomatoes, turkey and apples. Drizzle with dressing; sprinkle with walnuts and serve.
