I like to coat the shrimp with a little olive oil, add a little minced garlic and grill to cook.
1 lb. large or jumbo cooked shrimp, peeled and deveined, chopped
1 medium tomato, diced
1 avocado, diced
1 jalapeno, seeds removed and diced fine
1/4 c. red onion, chopped fine
juice of 2 limes
1 t. olive oil
salt and coarse pepper to taste
1 Tbls. fresh cilantro, chopped
broken romaine lettuce (for each serving)
In a small bowl, combine red onion, lime juice, olive oil, pinch of salt and pepper. Let stand for at least 5 minutes to mellow the flavor of the onion.
In a large bowl, combine chopped shrimp, avocado, tomato and jalapeno.
Combine all the ingredients together; add cilantro and gently toss. Adjust salt and pepper to taste.
Serve as is or on top of broken romaine pieces.
