4 large baking potatoes (russets, Idaho or large yukon golds)
4 Tbls. butter, melted
1/2 t. garlic powder or 1/4 t. garlic salt
1/8 t. paprika
1 Tbls. minced fresh parsley
salt & pepper to taste
low-fat sour cream, optional
With a sharp knife, cut potatoes in half lengthwise. Slice each half into slices, but not all the way through and fan potatoes slightly. Place in a shallow baking dish.
Melt butter with garlic, parsley, paprika, salt and pepper. Brush mixture over potatoes.
Bake uncovered at 375 degrees for 1 hour or until tender.
Serve with sour cream if desired.
