3/4 c. reduced fat mayonnaise (Hellman's with olive oil)
3/4 c. loosely packed cilantro leaves
1 Tbls. fresh lime juice
1 t. low sodium soy sauce (Kikkoman)
1 small clove garlic, minced
4 med-large Boston lettuce leaves
4 green onions, chopped (optional)
4 slices turkey breast (or ham)
4 red pepper strips
Place mayo, cilantro leaves, lime juice, soy sauce and garlic in a food processor. Blend until smooth. Refrigerate leftovers.
Place 1 slice of turkey on a lettuce leaf; spread with cilantro mayonnaise. Add a little chopped green onion and 1 pepper strip. Fold into a tight, cigar-like roll.
