14 oz. sweetened condensed milk
8 oz. pkg. chopped dates
1/2 c. chopped pecans
Ritz Crackers
3 oz. low-fat cream cheese, softened
1/4 c. butter, softened
1 t. vanilla
2 c. powdered sugar
In a large glass bowl, cook condensed milk and dates in microwave until thick (on high about 6-7 minutes total). Stir every 2-3 minutes. DO NOT OVER COOK. You can also use a double boiler. Stir in chopped pecans.
Spread filling on crackers and place on a cookie sheet. Bake at 350 degrees for about 6 minutes (watch so they don't get too brown).
Cool on wire racks lined with paper towel.
Frosting: Mix cream cheese, butter, vanilla and powdered sugar. Frost each cookie.
